Spiced Hot Apple CiderMakings of Apple Cider:

Mulled cider, also called apple cider is traditionally  an unpasteurized and unfiltered non alcoholic drink made from apples.  Essentially, it is raw apple juice that still contains the coarse pulp and particles of the apples. Having the sediments in the cider drink gives the serving more nutritional value.  Most apple ciders have a limited shelf life because of its unfiltered process.  Now with today’s health alerts, even unpasteurized versions of apple ciders are limited.  You can still find unpasteurized ciders at local apple orchards and some grocery stores, but more often than not, you will find pasteurized varieties of mulled cider.

Before making spiced hot apple cider, it takes about 4.5 lbs of apples to produce just 1 litre of cider.  That’s about 6 – 9 medium sized apples!  This of course depends on what type of apple you use.  Once the apples are collected, then the grinding and smooshing begin.  Pressing apples is the correct term.  There are several ways of doing this. You could do this at home and simply grind the apples in your food processor or juicer and be sure to keep the pulpy remains to add to the juice.

spiced hot apple ciderIn the past, cider mills were operated by horses, manpower, machinery and water.  Today, the mills are machine operated.  Some custom pressing is done and there are orchards and mills that abide by the old fashioned ways.

After the apples are rinsed, cut and smooshed into the consistency of applesauce, layers of the ground up apples are wrapped up in a cloth and placed onto wooden or plastic trays.  These layers are pressed together so that the apple’s juice flows and fills into containers.  The apple cider is refrigerated and sold as apple cider.  These jugs of cider are a pure form of unfiltered apple juice.  You can add spices to them to make your spiced hot apple cider that you get from holiday fairs and parties.

Health Benefits of Apple Cider:

  • Flavonoids!  Antioxidants! ~ helps cells fight against free radical damage.
  • Fiber! ~ The pulp and sediment contain fiber. Fiber improves digestion and can help lower blood cholesterol.
  • Potassium! 190 mg of potassium per serving.

  •  3 tsp of cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp grated ginger
  • 2 cloves
  • 1 tsp allspice
  • 1 orange slice peel

Directions for making Spiced Hot Apple Cider:

  • Add All Ingredients into a large Pot and bring the cider up to a near boil.
  • Just before it comes to a near boil, lower the heat and allow to simmer for 5 – 10 minutes.
  • You can always add more spices or opt for less depending on taste.
  • Too much clove can make it very strong.
  • Sugar may be added for more sweetness BUT I don’t recommend it.  The apple cider itself already provides enough sweetness.
