Peach Salsa – A Delicious Summer Dish

With summer almost at a close, why not serve up some fresh Peach Salsa. The combination of sweet and spiciness is sure to please.

Peach Salsa – Ingredients

6 peaches, peeled, pitted
2 large tomatoes, cut into wedges, seeded
3 tablespoons sweet onion, cut into wedges
1/2 jalapeno pepper
1/2 cup fresh cilantro, minced
2 teaspoons fresh garlic, minced
2 cans (4 oz) green chilies, chopped
4 teaspoons apple cider vinegar
3 packets True Lime or 2 cut Limes or 2 Tbs Lime Juice
1/4 teaspoon salt
1/4 teaspoon pepper
Tortilla chips

Peach Salsa – Directions

1. In a food processor, the Vitamix rocks in this department, Add peaches, tomatoes, onion, jalapeno, cilantro and garlic; pulse until coarsely chopped.
2. Add the chilies, cider vinegar, Lime, salt and pepper; cover and pulse just until blended.
3. Place in a serving bowl; chill until serving.
4. Serve with chips.

Feel free to add other ingredients to the Peach like jalapeno or lime to spice things up.  Teaming the Peach Salsa with baked tortilla chip scoops is the perfect combo.  This pairs well with grilled chicken or fish.  It also works really well on a bed of rice.
