Hungarian Hazelnut Cake – Flourless Gluten Free Never tasted So Good
Over the weekend Kathleen decided to take a crack at a Hungarian Hazelnut Cake that is flourless and gluten free. Let’s just say the cake was a huge hit. Who knew Flourless and Gluten free could be so good. The cake was consumed at such a high rate that sadly we didn’t have any leftovers.
We purchased our Hungarian Hazelnut Cake ingredients from Whole Foods, but you can pretty much purchase it from lots of other health conscious stores.
Ingredients
- 12 oz Hazelnuts
- 2 teaspoons baking powder
- 6 egg yolks
- 5/8 cups sugar
- 6 egg whites
- 1 pint heavy cream
- 1 teaspoon Vanilla
- Seasonal Fruit
Hungarian Hazelnut Cake Cooking Directions
Preheat oven to 325
Bowl #1
- Chop Hazelnuts into a fine powder using a food processor and add baking powder
- Whip 6 egg yolks w/sugar until pale yellow
- Add the hazelnut powder and beat
Bowl #2
- whip egg whites until stiff
- Fold 1/3 egg whites into Bowl #1
- Fold remain egg whites into Bowl #1
- Bake for 60-70 minutes
Remove From Oven
- let cool or place in refrigerator over night.
- Prior to serving whip heavy cream in clean bowl with a table spoon of sugar and a teaspoon of vanilla
- Put on Top
- Add Seasonal fruit as needed.
