Gluten Free and Vegan Granola Bars

Are the “It” snack! At least in my opinion.  Well, along with dark chocolate coconut bars, but let’s stay focused here!  Granola bars are a dime a dozen, right?  Not so.  These gluten free and vegan granola bars are quite delicious and easy to make.

Making these healthy snack bars is also a great way to save money.  At best I had been able to buy fresh granola bars for $2.00 a piece at the local grocery store. I did some math with these ingredients and I was able to cut down the price to $1.00 per bar by making these granola bars myself.  It all depends on what kind of nuts and dried fruits you decide to purchase.  I used a combination of dried cherries and cranberries.  Raisins are less expensive.  You could also try it out with dried figs and apricots.  Mmmmm I am salivating just thinking about this!

Eating these gluten free and vegan granola bars are also a healthy way to get your good fats and proteins.  There are so many “healthy” bars out there that are overloaded with too many ingredients that aren’t necessary.  I like to simplify my ingredients and be in charge of what goes in to my foods.  Making them is cost effective, fun and educating!

 

Gluten Free and Vegan Granola Bars Ingredients:

  • 3/4 cup of Almond Flour
  • 1 cup of Quick Oats
  • 3/4 cup of Dried Fruits
  • 1/2 cup of Chopped nuts
  • 2 tbsp of Chia seeds or Sesame seeds
  • 1/4 cup of Honey or Maple Syrup
  • 3 tbsp of Coconut Oil
  • 1/3 tsp of Salt
  • 1/4 tsp of Vanilla extract
  • 1/8 tsp of Cinnamon

Gluten Free and Vegan Granola Bars Directions:

  • In medium to large sauce pan add Oil, Honey / Maple Syrup, Vanilla extract, Salt and Cinnamon.
  • Lightly stir over low heat until frothy.  Then turn off heat.
  • In separate bowl, mix together all other ingredients.
  • Add dry ingredients to the saucepan and mix well.
  • Place Granola mix onto a flat baking sheet and spread evenly.
  • Bake at 350 degrees for 20 minutes.
  • Allow to cool.  Refrigerate if desired.
  • SHARE, DEVOUR and ENJOY!
  • *these granola bars may also be enjoyed without baking in the oven.  simply refrigerate after mixing.
  • *all sweeteners may be substituted with your preference.  Make accordingly to your taste buds desires. I prefer saltier to sweet so I used a little less honey and syrup and added a small amount more of coconut oil so to have enough wetness to mix well.
