Curried Apple Couscous – Recipe
Curried Apple Couscous is a fantastic easy to make dish. It will not only taste good, but it is a great carb/protein meal that is so good for you. What makes it really appealing are the addition of pine nuts and pomegranates.
Ingredients
- 2 Tablespoons butter or olive oil
- 1 medium apple (chopped fine)
- 3 scallions sliced thin
- 1 cup of couscous
- 1/2 cup pine nuts, walnuts or pecans
- 6-7 leaves of mint
- 1 3/4 cups of water
- 2 teaspoons of curry powder
- 1 teaspoon salt *
- 1 Pomegranate (Seeds Only)
Note *Optional
Directions
- Add butter and water and bring to a boil
- Chop Apple, Scallions, Mint Leaves
- Remove Seeds from the Pomegranate
- Once water is boiling, add couscous and turn off heat, stir as needed
- After a few minutes combine other ingredients
The Scallions and the Pomegranates seem to complement each other and make for a very tasty meal. The curry powder adds a lot of flavor to the couscous.
